In order to continue providing its clients with the best specialty coffees, Ipanema has been performing and following up on a number of studies in its experimental area with several of the existing varieties. This experimental area is located in Fazenda Capoeirinha, between Alfenas and Machado, a region traditionally known for the quality of its coffees, since it has special climatic conditions for coffee production: altitude above 900 meters, average temperature of 21.6oC and an average rainfall of 1,285 mm a year.
Ipanema always makes a careful selection of all existing varieties, and for the Cup of Excellence competition it chose the Yellow Icatu, since this coffee has outstanding characteristics of body, flavor, acidity and taste, acquired as a result of adaptability to the climate, soil, altitude, harvesting process and coffee preparation.

The winning lot was picked manually, during the second week of July. Only the ripe and well developed beans were washed and depulped, a process that was performed immediately after harvesting. The natural fermentation took place in brick-built tanks of aerobic fermentation. The drying process began on a terrace, where the coffee was exposed to the sun for a period of five days, proceeding next to mechanical dryers in a slow process and at controlled temperatures. After this careful process, the coffee was placed in wooden bins to rest and to be made uniform.
