Coffee processing system: Coffee, harvested in sieve and cloth, is pulped and desmucilaged on the same day it is picked. The levels of mucilage removal are regulated according to weather conditions and the sunny hours during that period. The coffee is initially dried on a covered and cemented terrace, and the process is completed with the use of dryers. The drying structure is located in the property of Guarino Bissoli, which is 4km from the Sítio Boa Sorte. Special care is given to the periodic washing of the terrace and turning the coffee which guarantee product quality. |

Quality concerns: According to Gelson Bissoli, his presence in seminars, symposia and lectures contributed to his constant updating and improvement of the techniques to produce good coffees. In addition to participating in seminars and other events, the producer received guidelines and instructions on how to produce high quality coffees from the technical director, Evair Vieira de Melo, of the Coffee Producers Association of Venda Nova do Imigrante (Certicafé/PRONOVA), who followed up on the activities during coffee harvesting and preparation, and suggested techniques and equipment to obtain high quality coffees. Statement by the producer about the Brazil Cup of Excellence Competition and Auction: "The experience of being one of the finalists of this contest is a great encouragement to constant improvement and to invest in quality. Other producers of the region have already contacted me to obtain information on how to improve the quality of their coffee. Entities of the region have also expressed their interest on disclosing our experience to other producers. This is gratifying." |
